About Us

LVEF is an educational farm nestled in the Laurel Hill neighborhood in eastern Eugene. Our small acreage hosts a wide variety of community members every season including our dedicated volunteers, energetic Outdoor High School Students and lively Youth Grow summer camp participants. We are dedicated to enlightening all who visit our farm about food and sustainable farming practices an initiative greatly supported by our CSA members.

Zucchini Recipe!

Who doesnt need more of theses?
Thanks to a dedicated member for contributing this interesting recipe

Zucchini Fritter Salad (With Yogurt)

2 cups grated zucchini
1/3 teaspoon of salt
3/4 teaspoon garam masala
1/4 teaspoon cayenne pepper
1/8 teaspoon cumin
1/2 cup of chickpea flour (I think substituting all purpose would work fine)
oil for frying
2 1/2 cup of yogurt
1/8 teaspoon salt

Grate the zucchini. Squeeze out any extra water. Mix the first six ingredients together to make the batter. Do not use any water. The water given out by the zucchini will be enough to make a batter. Heat the oil. Drop about 1/2 tablespoon of the batter into the hot oil and remove when the fritter is brown.
Drop as many fritters into the oil as you can handle. The fritters should not stick together. Continue until all the batter is used up. Let them cool to room temperature. Mix the yogurt and 1/8 teaspoon of salt. Add the fritters to the yogurt. Chill. Serve Cold.
